"On Saturday, December 2nd, we had our company Christmas party at the Caloosa Club. We have been residents of Cape Royal for ten years but never had a place here, other than our home, to hold such a function. We were more than delighted when the Caloosa Club was taking shape and before the kitchen was even completed, Chef Mark was getting rave reviews for his grilling expertise outside!
I met with Mark to discuss our menu and secure our date of December 2nd and was very pleased with the buffet items he suggested. The week prior to the party we met to finalize our plans for linens, décor, table placement, etc. The room was beautifully decorated for Christmas.
Chef Mark is one talented man! I don’t usually write reviews or contact management of any company but, this time I felt I needed to make everyone aware of the evening Mark planned for us. I am not exaggerating when I say the food was outstanding! Hors d’oeuvres were passed (and if you haven’t tried the coconut shrimp, they’re worth a trip to Cape Royal ) and drinks were served. Salads – not just any salad as you would normally be served in a restaurant, but Mark’s special touch was noticed by all the components on the plate. Our buffet dinner consisted of green beans almondine, mashed potatoes, chicken piccata and a wonderful prime rib with red velvet cake and Christmas cookies for dessert. These are fairly common items that were chosen to please everyone’s palate. Chef Mark’s expertise with flavor, seasonings and some sort of secret magic turned those “common” items into an outstanding dinner. Each person commented how great the food was and asked if we were going to come back next year. Of course the answer was a definite yes and we will add another function in July.
